Kirsten's Modified Mayonnaise

Read The Godmothers

KIRSTEN'S MODIFIED MAYONNAISE

                                                                              

½ cup flour
            2  heaping tablespoons sugar
            2  teaspoons dry mustard
            2  teaspoons salt
            1/4 teaspoon paprika    
            a few grains cayenne pepper

Mix the dry ingredients in a small saucepan. Then add:

2 tablespoons salad oil out of 2 cups
            1/4 cup vinegar
            1 cup boiling water

 Cook until thick over medium heat, stirring constantly. Allow the mixture to cool. Add:

two whole eggs

Beat in the eggs with a wooden spoon and turn the mixture into a food processor. Add in a thin stream:

The rest of the 2 cups salad oil.

Beat until thick and glossy.

[I put the mayonnaise into two jars. This way the whole mixture isn’t warmed up every time it is taken from the fridge which helps to preserve freshness.]
